Vegetable BBQ in the Oven

A quick and easy summer night idea , when you want to have a light, but nutritious dinner on the back yard or on the balcony! with your (vegan) friends and family.


How long does it take?
  • 25-30 minutes.


What do I need?

For 4 adults:

  • 4 large sweet potatoes

  • Cauliflower florets 600 gr.

  • Firm Tofu 500-600 gr.

  • 4 large zucchini

  • Cherry tomatoes

  • Tamari or soy sauce

  • Miso paste

  • Garlic

  • Mustard

  • Dried Herbs (oregano, rosemary)

  • Curry powder


Process (in the oven)
  1. Preheat the oven 180;

  2. Place sweet potato wedges and cauliflower florets onto a baking tray with parchment pepper;

  3. Sprinkle with olive oil, 2-3 pressed garlic gloves, dried herbs and curry powder, toss with hands;

  4. Place in the oven for 25 minutes;

  5. Cut zucchini into stripes, brush on each piece some olive oil and miso paste;

  6. Sprinkle fresh minced garlic onto each zucchini piece and place cherry tomatoes on top;

  7. Cut tofu into stripes and coat with a dash of olive oil, 1 tbsp. of tamari and 3 tbsp. of miso paste;

  8. Place into the same baking tray with zucchini and put un the higher level in the oven for 15 minutes;

  9. Serve with mustard or guacamole.
