Buckwheat pancakes -weekend vegan treat!

Every Saturday or Sunday morning starts with pancakes in my family! I just love pancakes for their fluffiness, versatility and the mornings always feel special when you start them with pancakes don’t they ?

What do I need?

  • 200 gr. of buckwheat flour

  • 300 gr. of plant milk

  • 1 banana

  • 2 tbsp. of flax seeds

  • 1/2 tsp. of gluten-free baking powder

  • a pinch of salt

  • 2 tbsp. of date syrup (optional)

Recipe

  1. Mix all the ingredients well in a powerful mixer, blender.

  2. Fry on a non-stick pan or with a little bit of oil for 3-4 minutes on each side.

  3. Serve with berries and date syrup on top. You can also have it with maple syrup, jam or any sweet or savory topping!
