Easy Cabbage and Fennel Vitamin Boost Salad

I created this salad just before going on vacation. I had 1 fennel in the fridge , a white cabbage and apples. I decided to leave all the ingredients raw as fennel and cabbage have so many health benefits. Fennel nutrients benefit to strong bones, prevention from heart disease, reduces inflammation, increases Iron absorption and boosts the immune system overall. Whereas raw cabbage has 16 essential amino acids, apart from other vitamins and only fresh cabbage preserves the important elements to fight infections and fungal overgrowth and supports liver health. I hope I convinced you not to cook your cabbage and try to eat it raw :)



What do I need?

  • 1 small white cabbage

  • 1 fennel

  • 1 apple

  • 1 red onion

  • 1 tbsp. of organic mustard

  • Juice of 1 lemon

  • 1 tsp. of Apple cider vinegar

  • Fresh parsley

  • 1 tbsp. of oil ( I use flax oil for omega 3 boost)


Process

  1. Thinly slice the cabbage, fennel and an apple and put into a salad bowl;

  2. Dice an onion and parsley and add to the bowl;

  3. Make the dressing: mix lemon juice, apple cider vinegar, mustard and oil, stir well;

  4. Toss the salad with the dressing and serve.


Note

The salad has a good intense flavorful also on the next day. It‘s a good salad option to prepare for parties or other events in advance as it will stay fresh one day in the fridge whereas the green leafy salad should only be served immediately.
