Vegan gluten-free 3-ingredient pancakes

This recipe has become a tradition in our family. What can be nicer than start a Sunday relaxed morning with fluffy and delicious fully vegan pancakes. Only 3 ingredients and you’ve got a perfect family breakfast.

What do I need?
For 4 portions:
300 gr. of gluten-free oats
3 Bananas
200-300 ml. of plant milk (I prefer an almond one)
Process
Combine the bananas and oats in a blender;
Pour the almond milk into the mix and mix it in the blender, the consistency should be think , but liquid enough to be able to pur the mixture onto the pan;
Fry the pancakes in a pan 3-5 minutes in each side, depending on your stove and pan;
If they stick, brush the pan with some oil.
Notes
The ratio of the banana and oats depends on your taste: if you want the pancakes to be softer and sweeter, put a bit more banana, if firmer and neutral , then more oats and less banana.
Oats tend to thicken over time, so the longer the mixture stays the more plant milk is to be adde, or you when the mixture is too think you can add some water too.
Serve with melted dark chocolate, maple syrup, apple muss or jam.
