Super Healthy Mediterranean Buckwheat Bowl

Buckwheat is the healthiest grain on earth. It has all essential amino acids for humans and pair especially well with mushrooms!





How does it taste ?


The buckwheat has a nutty flavour and the champion sauce is so creamy and delicious! Fresh greens and vegetables make the bowl a complete meal as a lunch or dinner option.


How long do i need?


  • 20 minutes to boil the buckwheat

  • 15 minutes to prepare the sauce and garnish


What do I need ?


For 2 portions:

  • 150 gr. of buckwheat (brown or green)

  • 250 gr. of champignons

  • A hand full of frozen peas

  • 1 onion

  • 2 gloves of garlic

  • 100 gr. soy or almond milk

  • 5-6 cherry tomatoes

  • fresh leafy greens

  • radisрes

  • olives

  • dried oregano, thyme and basil

  • dried coriander


Process


Boil the buckwheat
  1. Rinse the buckwheat under cold water and put in a pot

  2. Add to pot 300 ml. of water and bring to a boil

  3. Reduce the heat and simmer for 20 minutes.


Prepare the champignon sauce
  1. Peel an onion and garlic

  2. Chop the onion, garlic, slice the champignons and cut cherry tomatoes into halves

  3. Add a drop of oil onto a pan

  4. Saute the onion and garlic for 3 minutes

  5. Add the champions and saute another 3-4 minutes , add a little bit of water if needed

  6. Add dried herbs, coriander and salt to taste and frozen peas

  7. Add almond milk and tomato halves and simmer for another 5-7 minutes with the lid closed.


Garnish the bowl

Place the buckwheat in the bowl ,add some fresh greens, radishes, cherry tomatoes, olives and pour the champignon sauce. Sun dried tomatoes and raw zucchini noodles would be a perfect addition to this bowl too!
